Fresh Pasta

- Note: For the sauce use a simple one as tomato sauce, pesto, beef or duck sauce.

Ingredients

  • 400 g durum wheat
  • 200 g hot water
  • 6 g di salt

PREPARATION

  • Mill the durum wheat using Faribon 600 or Faribon 600 P until to produce a fine semolina;

  • Put the flour in a heap, add salt and gently start adding water in the center, mixing it using a fork;

  • Start kneading strongly with the hands, embedding well the total of flour;

  • Continue to work the dough stretching and rolling it for at least 4-5 minutes;

  • When the dough made is smooth and compact, cover it with the cling film and leave to rest for at least 30 minutes;

  • Make the desired type of pasta using a pasta extruder.
