Homemade orecchiette pasta

- Note: We propose two versions for this dish: a summer version seasoned with salted ricotta and cherry tomatoes, and a winter version with sausage and turnip greens.

Ingredients

  • 300 g wheat
  • 150 g buckwheat
  • 100 ml water
  • 1 egg white
  • Salt q.s.

PREPARATION

  • Grind the wheat and the buckwheat with Faribon600 or Faribon600P;

  • Put the obtained flours in a heap, then add salt and egg white;

  • Gradually add the water into the mixture and continue to knead;

  • Roll the dough out to the shape of a thin ropes, cut a piece and flatten it with a knife by giving the classic shape of a small ear;

  • Cook them in boiling water for 5 minutes.
