Charcoal tagliatelle

- Note: Our favorite seasoning is smoked salmon, burrata, taggiasca olives and basil: these tagliatelle are delicious and create a pleasant chromatic effect. Absolutely to try!
Ingredients
- 250 g wheat
- 250 g durum wheat
- 20 g charcoal
- 6 egg yolks
- Extra virgin olive oil q.s.
- Salt q.s.
PREPARATION

Finely grind the two types of wheat with Faribon 600 or Faribon 600P;

Make a well with the obtained flours, then add charcoal, egg yolks, oil and salt one by one, by mixing first with the fork then with your hands;

Knead at least 20 minutes, by beating vigorously the dough on the pastry board;

Roll out the dough and prepare the tagliatelle;

Cook the pasta in boiling salted water;

Season to taste.
