Tray pizza with courgette flowers, anchovies and “burrata”

- Note: The pan pizza is ideal for a dinner with friends but If it is cut into cubes and accompanied by a spritz, it is also a perfect and quick aperitif.


  • 500 g wheat
  • 13 g fresh yeast
  • 400 g warm water
  • 8 g salt
  • 10 g oil
  • A bunch of courgette flowers
  • Burrata (about 150g)
  • About ten anchovies in oil


  • Pass the wheat with Faribon 600 or Faribon 600 P;

  • Pour the flour and mix it with yeast, oil, warm water (added slowly) and salt;

  • Knead vigorously for at least ten minutes, then leave to rest for 3-4 hours;

  • Grease the baking paper with a little oil and arrange the courgette flowers half-open, already deprived of the pistil, salt;

  • Roll out the pizza with the help of a rolling pin and bake in a preheated oven at 200 ° C for 15-20 minutes;

  • Remove the pizza from the oven, turn it with the help of baking paper and garnish with anchovies and burrata;

  • Enjoy while it is still warm.
