Almond paste

- Note: If you would like to try a challenge as a real pastry chef, shape the almond paste into fruit and then complete it by painting with food colouring.

Ingredients

  • 300 g almonds
  • 300 g sugar
  • 2 egg whites

PREPARATION

  • Toast the almonds and grind them with Faribon 600 or Faribon 600P;

  • Mix the almond flour obtained with sugar and egg whites in a planetary mixer;

  • Put the mixture into a pastry bag with a star nozzle;

  • Create small flames, deposing them on a greased baking pan;

  • Leave to stand for 4 hours at room temperature;

  • Bake at 220° for 4 minutes.
