Butter muffins

- Note: Dust the chocolate chips or fresh blueberries with flour before adding them to the dough, so that they will not sink during baking.

Ingredients

  • 2  eggs at room temperature
  • 140 g butter
  • 200 g sugar
  • 380 g wheat flour (to be produced with Faribon 600 or Faribon 600 P)
  • 1 packet of baking powder (about 16 g)
  • 1 pinch of salt
  • 250 g whole milk
  • 1 lemon(rind)
  • 1 vanilla pod
  • 125 g chocolate chips or fresh blueberries (at will)

PREPARATION

  • Grind the Wheat with Faribon 600 or Faribon 600 P by choosing a fine grain size

  • Melt the butter and let it cool down;

  • Combine all the liquid elements (milk, butter and eggs) in a jug and mix with a fork;

  • Sift the flour and baking powder into a bowl, then add the sugar, a pinch of salt, the grated lemon rind and the vanilla pod seeds;

  • With the electric or hand whisk, gradually add the liquids to the powders, stirring gently and being careful not to form lumps, until a smooth and homogeneous mixture is obtained;

  • Add the chocolate chips or fresh blueberries to the dough;

  • Using a spoon, fill the cups;

  • Bake in a preheated oven in static mode for 35 minutes at 180 °C.
