Barley cake with chocolate

- Note: The cake could be flavored with orange peel in order to soften the strong chocolate taste.

Ingredients

  • 250g wholemeal barley flour (to be produced with Faribon 600 or Faribon 600 P)
  • 170g sugar
  • 100g butter
  • 1 sachet baking powder
  • 4 egg yolks
  • 230g dark chocolate

PREPARATION

  • Mill the pearl barley with Faribon 600 or Faribon 600 P to get the flour;

  • Roughly chop the chocolate and on low heat melt it with butter in a small non-stick pan;

  • While the chocolate is cooling, beat the egg yolks with the sugar until foamy and puffy, then add the chocolate mixing delicately;

  • Add gently the barley flour and the baking powder, paying attention at mixing vigorously until obtaining a homogeneous mixture;

  • Pour the mixture in a baking tray, previously lined with baking paper, and leave it in a preheated oven at 180°C for 35- 40 minutes, static option.
