"Castagnaccio"

- Note: The “Castagnaccio” is a typical dessert from Tuscany that is very popular. We choose to give up the pine nuts in place of almonds, but it goes well with every kind of dried fruit, especially with nuts.

Ingredients

  • 500g dried chestnuts
  • 100g slivered almonds
  • 80g raisin
  • 4 spoons sugar
  • 650ml water
  • Extra virgin olive oil to taste
  • Salt to taste
  • Sugar to taste

PREPARATION

  • Mill the dried chestnuts in fine-grained using Faribon600P Faribon600, up to get the chestnuts flour;

  • Soak the raisin and toast the almonds in a non-stick pan;

  • Sift the chestnuts flour in a bowl and add a bit of salt, the sugar and 2 spoons of oil;

  • Add the water a little at the time, while stirring constantly with a thin ladle until to get a quite fluid batter;

  • Dry the raisin and add the half of it to the mixture;

  • Grease with butter a pan, pour the mixture and garnish with the remaining raisins and almonds;

  • Bake it to a preheated oven 180° for 40 minutes
